Vegetable Samosa’s

Recently i updated my kitchen and it’s so nice and easy to have some good material to work with.
These Samosa’s are baked in my Philips Airfryer HD9240 XL. This is a wonderful machine for the small kitchen where you can do most of the baking with just a little bit of olive oil or even without oil, baking in smaller form than big ovens of course. But it’s handy and easy to clean.
Will do a separate review about this machine soon.

These indian snacks are ideal for a quick and light meal. You can make them in advance, freeze them or serve with a salad. I wanted to make these for a while and finally i did it.
The only thing i had troubles with was the Filo dough! Gosh! since it ripped all the time when using only 2 sheets. So, i used 4 sheets instead and they kept steady. Maybe i make my own Filo dough one day......
I found an interesting Youtube film of Bina Raniga (if you just want to see the making of the pocket, go to 7.30 minutes duration of the film). This actually helped me making the pockets for the filling and also the way she sticks the layers just with flour and water, much better than just water.

I have never done this before, so this was quite new to me as well :)




What you’ll need : 

2 tablespoons of olive oil
1 onion (fine chopped)
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon turmeric
1/2 teaspoon ginger powder (or fresh ginger)
1/2 teaspoon Garam Masala
1/2 teaspoon Curry powder or paste
1 garlic bulb
225 potatoes diced (about 1cm or smaller)
100 gr freezed peas (defrosted before you add them)
150 gr of spinach (chopped)
12 pieces of Filo dough


* TIP : To have the potatoes nicely diced i use the Nicer Dicer Plus (which you can buy at Blokker or Carrefour too these days). It’s also ideal to chop the onion in small pieces too and many more vegetables. very handy in the kitchen!


Recipe : 

1. Heat the oil in a pan and add the chopped onion. stir for 2 minutes.
2. Then add all the spices and garlic in it for about 1 minute.
3. Add the diced potatoes and bake them for about 5 minutes, till they become a bit soft.
4. Add the peas and the spinach and bake for another 3 to 4 minutes.
5. Prepare the pockets to fill as on youtube film above. Trust me, it’s easy this way, as you only have to fill it and not turn and twist with filling to make a pocket. Otherwise you will make a mess.
6. Add about 2 tablespoons of filling in the pocket and stick together as described in film.
7. Then preheat your oven at 200°c.
8. Make sure you add some oil or melted butter on the samosa’s before they go into the oven.
9. Put the samosa’s in a basket and bake for 5 minutes.
10. Check if the samosa’s are baked well, otherwise add another minute.

You’ll see that this is a very healthy way of cooking. No fat and so light to eat.
My husband liked it really, just personally i think it could be more spicy. Maybe i will ad some more Curry next time. This is certainly something to make again soon :-)
