Banana Cake



Cake made with very ripe bananas






My first recipe post is a Banana Cake. But it’s no ordinary Banana cake!
As you may read on my introduction (welcome) page, i’m not a fan of sugar and fat. So i adjusted this recipe to become a healthy sweet cake.
Even the dough tastes really good before the baking which i always can not resist to taste :)

TIP : You can make many other things with ripe bananas, like Milkshakes, you can freeze them in, Banana ice cream, cupcakes, use it in a smoothie etc....


What you’ll need : 

260 gr flour (i use pastry flour)
1 teaspoon baking powder
Some salt
150 gr Coconut Blossom Sugar (which tastes similar to Brown sugar)
1 teaspoon cinnamon
120 gr coconut oil
2 eggs
4 ripe bananas
1 tablespoon Calvados
1 handful almond flakes
1 handful Cocoa nibs for on top


Recipe : 

1. Pre heat your oven at 180°c.
2. Then mix in a bowl the flour with baking powder and salt.
3. Melt the Coconut-oil a bit in the microwave. Don’t cook it,  Set aside for a minute.
4. Add the Coconut Blossom sugar to the flour with the eggs, cinnamon, 3 bananas in pieces and 10cl Calvados. If you have kids, don’t add it :)
5. Now you can add the coconut-oil. Gentle mix all ingredients with a spoon, no machine.
6. Make sure you mix well, as there can be some flour left on the bottom of the bowl.
7. I also added a bit of Almond flakes for a nut taste inside the cake as well.
But you can also add some walnuts if you like for a more Autumn taste.
8. When you mixed all ingredients well, put it in a cake mould which has been greased with some oil or butter, so it does not stick when the cake is done.
9. Cut the last banana in pieces and lay on top together with the cocoa nibs.
10. Put in the oven for 60 minutes still on 180°c.
11. When ready, let it cool down in mould for about 10 minutes and then release the mould. Lay on a grid till it’s fully cooled down.
12. Store in fridge to keep fresh.

It’s not that the Coconut additions will overrule the taste of the cake.
It will add a nice touch next to the intense taste of the bananas.
I’m sure you are going to love this cake and it’s even healthy for you,
and your kids will love it, without the calvados then :)
