Roasted nuts Tofu rice Bowl



Healthy in every Way





I must admit i look around pretty much at other foodblfoggers and what they come up with. Some people even inspire me to create my own variation on it. And sometimes i have to make my own variation cause i simply can not find the ingredients.
Here it was no different. Though the recipe turned out really good and hubby loved it :)

The inspiration comes from Vegan Richa. She has wonderful recipes and i’m sure i will try some more in the future. I even bought her book which is really good if you are in to indian vegan food.

As i’m a creator myself, i made my own version of it, but the main recipe comes from her : which i’m really thankful for.


INGREDIENTS

1 big Tbsp of Coconut oil (no vergine)
100 gr of mixed nuts (but mainly cashew, walnut and macadamia)
1 dried red chili pepper chopped with seeds (depending on your spiciness)
4 cloves of garlic finely chopped
1 cm of Ginger without rind and chopped
1 small onion chopped
1 spanish green pepper and 1 red bell pepper (chopped)
1 spring onion in rings
200 gr of smoked tofu in cubes
Salt and pepper


For the Sauce

1 Tbsp of Soy sauce
3 Tbsp of Ketjap Sauce
3 Tbsp of rice wine vinegar
1/4 tsp of Palm sugar
1/4 cup of water
1/4 tsp of sesame oil (from Tahin jar)





PREPARATION

Prepare all the chopping first, cause it’s going to be so easy once you start cooking.
Put in bowls and set aside till use.

* Mix your sauce first by adding all of the sauce ingredients to a jar or small bowl. Shake or stir well and set aside till use.

1. Heat the Coconut oil in a skillet or pot and add the mixed nuts. stir till they become golden brown. Add the chili  and stir frequently. 

2. Add garlic and ginger (but on middle heat). The garlic may not burn or it will taste bad. Add the onions and vegetables. Season with salt. Keep stirring so everything get’s cooked.

3. Add the tofu and cook for another 2 minutes. Now you can add the mixed sauce and stir gently.
If necessary add some more salt. Simmer for a few minutes till the sauce thickens a bit. But that will not be too much. In the meanwhile you can cook your rice. Both will be ready together.
Just add the nuts / tofu mixture to the rice and stir gently. Serve in a nice bowl and enjoy.

Very easy, very fast once you chopped everything and very tasty!
